Al Pastor is an incredible and fast marinated pork Mexican dish served in tacos. This dish is a must-try for any serious pork lovers, and will convert skeptics alike.
INGREDIENTS
- 2Kg boneless pork shoulder sliced against the grain into 5mm thick slices
 - SmokeWolfe All Purpose seasoning 20g (Marinade)
 - 150ml Pineapple juice (Marinade)
 - 150ml Gochujang (Marinade)
 - 1 finely chopped onion (Marinade)
 - 75ml honey (Marinade)
 - Tinned pineapple slices
 - Coriander leaf 50g finely chopped
 - Corn Tortillas (for serving)
 - Shredded lettuce (For serving)
 - Finely sliced onion (For serving)
 
INSTRUCTIONS – BBQ Method
Total cook time 20 minutes hour, marinate 1 hour
- Combine all the marinade ingredients together and mix well
 - Carefully coat all the pork shoulder and set aside for 1 hour
 - Heat up the BBQ to medium heat (200C)
 - Toast the pineapple rings on the BBQ until lightly charred, set aside to cool down
 - Cook the marinated pork slices on the BBQ – 3 minutes each side
 - Meanwhile chop up the pineapple and mix with the finely chopped coriander
 - After the pork has been cooked – set aside on a serving platter and warm the tortillas through.
 - Top the pork with the pineapple salsa and serve with shredded lettuce and sliced onion.
